So..........I tried making Kishke, the recipe w. carrot onion celery, flour and Matzo Meal. BUT I substituted oatmeal for BOTH the flour and Matzo Meal. What a mess. It didn't get solid. It stayed a mush. Luckily it was in parchment paper.

What could I use w/o any wheat in it, period?

like defy said, why not use whole wheat? I ONLY use whole wheat flour and I DONT use sugar AT ALL in recepies. I use honey instead as well as oil in place of margarine, I never ever use margarine and everything comes out jus the same as if I would have used sugar and marg.

I dont usually make stuff like kishke, but the one time I did, I used all whole wheat flour and it came out AWESOME. My recipe did not call for matza meal or crackers, though. It was the kishke recipe in the Lub. purple cookbook.

are you opposed to using wheat, in general?

I'm trying an elimination diet- eliminating foods that are likely allergens, and then reintroducing them one by one. Wheat is a highly allergenic food to some. So yes, for the meantime, I'm trying to eliminate wheat. Altho I read that some people are allergic to oatmeal.

Rice flour
Rye flour
Spelt flour
Potato flour

Try googling "gluten free flours"...you should get several alternatives.

If you're not using any type of wheat, I'd second what Marion said and the other poster that mentioned soy flour.

Most grocery stores sell smallish bags of those flours.

I use whole wheat crackers or matzah in the food proccessor. You can subsitute for spelt matzah.

Where do you get Spelt Matzo? Where would it be reasonably priced? Do big supermarkets sell Kosher spelt products?
