Slow cooking meat

Hi everyone, Shana Tova to all
I would like to leave my oven on 200 over Yom Tov. I would like to cook my meat ( minute steak roast) tomorrow morning. Is it safe to cook at 200 degrees? how long shall I bake it for?

How much does your roast weigh?

You can definitely do it you just need to make sure you have enough time for it to slow cook.

It's a small roast. I'm going to leave it on 250. Any idea how long that should take?

Is it 2 lbs.? Maybe 4 hours or so.
Is it 3 lbs? Maybe 5 hours.
