If you want some variety, use some recipes from a cookbook or online that are different from what you usually make and use different spices than you're used to.

I make a lot of Mexican food, so I use a lot of chili powder, cumin, etc.

I always did. Can't speak for others.

Would they eat things like bean burritos, tacos, chili? If so, then I don't see why not.

ginger is a great spice, and also oregano.

Ginger I use on my green beans. I mix ginger with soy sauce and pour over steamed green beans, it really gives them a kick!
It is also great in stir fry.

Many times, my shabbos menu is similar to what I eat during the week if it's only me and DH, except during the week I don't eat so much meat, so on Shabbos I'll include meat.

This shabbos lunch I'm planning on making:
Whole grain challah
salad with a dressing made from mayo, vinegar, splenda, dill, and garlic salt
Sherry rice w/ mushrooms (or maybe pasta cous cous with mushrooms)
shnitzel wrapped around pastrami
melon for dessert

If you want to see more of my menus, there's an ongoing thread that has people's shabbos menus in it. I've gotten lots of ideas from seeing what other people make on there!

I have a huge spice closet but stick to my basics:

salt, pepper, garlic powder, cayenne pepper, cumin, oregano, rosemary, crushed red pepper, minced garlic, minced onion, I could go on!
I like food and I like different kinds of food.

I also have different oils and vinegars.
Sesame oil, canola oil, sunflower oil and olive oil.
Rice vinegar, red wine vinegar, white wine vinegar, apple cider vinegar, white vinegar, balsamic vinegar. Yes, I use them all!!

One of the basics is paprika. I use it to season everything, from chicken, chulent, eggs. It gives everything a real nice color.
