I usually make 2. leek and onion browned in butter with a little bit of salt and pepper, then add eggs, milk and cheddar cheese. The other is sliced zucchini sauteed in olive oil, then into the milk/cream and egg and cheese mixture add some Dijon mustard.
Today I made a new one, caramelized onion and sweet potato (saute, add some brown sugar). The liquid is heavy cream, eggs, whole grain mustard, Gruyere cheese and a bit of thyme, but you can use any herbs you like.

I am looking for a mushroom quiche recipe, no crust, that can be made with fresh mushrooms. Anyone has a good one?

Quiche dough (for 2 quiches)
• 3 cups flour
• 1 marg.
• 1 cup boiling water
Onion Mushroom Quiche
• 3 large onions
• 1 can mushrooms
• 1 ½ T. flour
• 2 eggs
• ½ cup grated cheese
• 2/3 cup dessert whip
• ½ tsp. pepper
• ¾ tsp. salt
Sauté onions. Add mushrooms. Add flour. Stir for 3 min.
Remove from heat. Add rest of ingredients. Pour onto quiche dough
Bake for 25 min.
Tuna Quiche
• 1 can tuna
• ½ cup mayonnaise
• 2 eggs
• 2 T. flour
• ½ cup milk
• 4 oz. can mushroom (optional)
• ½ cup grated cheese
Mix and pour on top of dough. Bake 350 for 45 min.
Zucchini Quiche
• 4 cups sliced zucchini
• 1 cup chopped onion (1 onion)
• ¼ cup margarine
• 2 T. parsley flakes
• ½ tsp. salt
• ½ tsp. pepper
• ¼ tsp. garlic powder
• ¼ tsp. oregano
• 2 eggs
• ½ - 1 cup grated cheese
Sauté zucchini and onion in margarine.
Remove from heat, add rest of ingredients.
Pour onto quiche dough. Bake.

Thanks, but I don't have dessert whip or margarine, only have fresh mushrooms, and only one onion.

I can't help you with the onions, but as far as the dough, I sometimes use puff pastry instead of making my own dough. Comes out delicious.

I've used this recipe before with whatever veggies I had on hand:
3 eggs
1/2 cup half and half (or any kind of milk)
1 cup shredded cheese
salt
pepper
oregano
I would just saute your onion and fresh mushrooms in a little olive oil and add them to the above mixture. Stir well and bake at 350 for about an hour, or until it's set.

I have a pareve quiche recipe using fresh mushrooms and zuccini and onion.
You can make it without zuccini if you dont have.
Let me know if you want it.

1 zuccini sliced in rounds
5 mushrooms sliced
1 onion chopped
Saute in oil
Add 1/3 cup flour. Mix.
Add 1/2 cup water
1/4 cup mayo
3 eggs
1 tsp baking powder
1 tsp Salt
Pour into pie crust. Bake at 350 for 1 hour.
To bake evenly without cracking place pie pan in a water bath.
