Hiya all professional chefs who need-no-new ideas for cooking,

I do not belong to the club mentioned above, and am in dire need for some easy supper ideas. I contemplated writing up a monthly menu to keep handy... so that I won't need to fumble thru my bemuddled overtired mind to think of what to serve for supper.
I have a one-yr old who still doesn't sleep more than a 5 hour stretch so my body is sorta acting like a baby too Wink

Any assistance in this cooking matter?
Anyone have any menus they can offer?
Any quick recipes?

Looking forward... my mouth is watering already!

I have lots of quick yummy meal ideas. Tell me what you like to serve and I will try to help. (For example bone-in chicken once a week, cutlets once a week, meat once a week, Milchig once a week, etc. There are tons of ideas for variety without having to repeat anything for a month or two.)

hey ra_mom, you sure sound like you've got a full batch of recipes ready... Smile

My family is on a lil diet consisting of eating: lotsa veg, protien etc... and trying to cut out most starch/sugar.
My hubby loves fish, meat and poultry... so all of htat goes.
Any ideas would be very helpful!

I like to prepare my menu before I do my weekly shopping. I buy what I need, clean and prepare all meat and poultry according to menu and freeze until needed. I defrost the morning of, and bake when I come home.
Baking my food helps me keep the dishes down as I use disposable pans to bake in, and it helps because I can just shove the food in the oven, set the timer, and deal with what's going on at home instead of being busy with the food.

Some ideas:

-Italian Primavera chicken
-herb roasted chicken
-Southern Style Chicken
-Greek garlic chicken
-succulent chicken

-crispy garlic chicken (love to do this with boneless dark meat chicken bottoms and adjust temp)

-garlicky green beans (1 lb. green beans, 6 garlic cloves, olive oil, kosher salt - cookie sheet 400 for 20 min - sprinkle with sesame seeds)

-roasted veggies (small zucchini, yellow squash, halved mushrooms, red onion chunks, handful baby carrots, 1/2 head garlic, olive oil, kosher salt - roasted on cookie sheet at 425 for 40 min)

-steamed broccoli

Now that I think aboutt it, if I were a fly, ra-mom might swat me:(

Maybe I just want to be ra_mom's next door neighbor, to whom she gives all her leftovers every day because she only serves her family garden-fresh meals!

What if you're trying to cut down on most sugar and starch (but particularly glutinous starch, starchy veggies are still ok in moderation) BUT also on a budget that has only very, very minimal room for meat/chicken/fish and expensive vegetables (like broccoli and cauliflower because we only use the frozen "bug free" kind with hechsher)

Sigh. We've been managing more or less but I am running out of ideas and we get bored a little too easily.

we love roasted zucchini.
variety of colorful roasted veggies.
roasted carrots.
roasted green beans.
roasted beets.
roasted tomatoes.
roasted eggplant.
roasted mushrooms.
all fresh and in no need of bug free hechsher

We don't want to overdo cholesterol so eggs can only be one main dish per day, usually breakfast or lunch. I do tuna once or twice a week. One fleishig night, always enough ideas for that. Aaaaand... that's when I start reverting to my old hi-carb, hi-gluten habits that make me feel sick Sad

And I want ra_mom to be my personal chef. I'm lucky enough to have her free advice and recipes here, though!

Seeker, what about stuffed vegetables? You can do all brown rice or a combo of rice and lentils or beans, no meat necessary. Stuffed peppers, stuffed zucchini. A nice bonus is that it's a one pan meal that comes together very quickly.

Ra mom- I checked out the links you sted. I realized most of your recipes calls for baking the chicken UNCOVERED.
Why is that?
Doesn't that:
A. Take much longer to get soft?
B. make the chicken very dried out?

I am with ra mom quick oven suppers are the best especially when e/t is in one pan I can list some of the ideas I do some are oven some are stove we are not big dairy people do to intollerances do alot of chicken and meat cause thats what my kids can handle
meatloaf
chicken with rice (can add veggies)
chicken with couscous
chicken with sweet potatoes
ducksauce chicken
hurry chicken from allrecipes.com
grilled cuttlets
breaded cuttlets(mainly shabbos)
hamburgers in oven or in frying pan with onions
meatballs can be done fully in oven
meatballs with veggies
sides:
garlic green beans, snap pea or snow pea can do a ll 3 together
roasted root veggies
honey garlic glazed carrots
snap pea stir fry done fully in oven
roasted and sauted veggies can be varried by type and spices you season with


soups are great they don't all need babysitting but most can be frozen so cook once for many days

crockpot suppers may also help you if you need recipes for anything listed let me know

can you do more of a variety than eggs for breakfast, so you can do eggs for at least once a week dinner? How about cottage cheese with whole wheat bread and cut up veggies? Or fiber one cereal with skim milk?

Then you'd be able to do oven baked frittata or oven baked omelet roulade one night.

Also, have you tried the easy oven baked falafel balls?

What about poster shnitzel's oven baked honey lentils? Haven't tried them but I hear that they are really good.

I love chicken with crisp skin and soft meat which has to be eaten right away right out of the oven. But you probably like your chicken falling off the bone like dh does Smile In that case, you must like it covered and cooked for very long. I enjoy that too sometimes, but really the way I like my chicken is just done and crisp.

If we don't have eggs for breakfast, we usually have them for lunch (DH takes them in a sandwich with him, DD and I at home) And if one day we don't, we're still pretty tired of eggs from having them breakfast or lunch every OTHER day. Anyway, bread and cereal and all that are very starchy breakfasts and set me up for energy crashes all day. I used to do cereal every day my whole life but lately it's not working for me anymore.
Don't know an easy falafel recipe but I have a great harder one that's good, but we don't like falafel enough to have it more than once in two weeks or so.
I'll have to try getting more experimental with lentils. I never thought I liked them but people have been posting different kinds of ideas so maybe I'll learn to like some form of them.

OP you mentioned your husband likes fish so what about teryaki salmon? All you have to do it pour teryaki sacute (Mikey's is a great company, but any company will do) over the salmon and bake for about 1/2 hour. It's delicious. If you do salmon I have a couple of other recipes as well.

Fleishig ideas are:
Garlic chicken
Meatloaf (delicious!)
teryaki chicken and stir fry veggies
also, if you have a george forman it's an easy and healthy way to make cutlets, burgers, and more.
Crock pot meals are another great idea for a busy mom. You just put it up in the morning and you have it ready in time for supper with minimal work.

some side dish ideas
roasted veggies (tomatoes zuchinni etc.. with a bit of olive oil and oregano and basil)
brown rice with mushrooms
onion soup, tomato and rice soup, zuchinni soup

If you'd like any of these recipes let me know.
