This is my go-to recipe, but my husband doesn't like tomatoes so I end up eating most of it.
Spray a pan with Pam or add just enough oil to coat bottom.
Slice 1 onion and 1 tomato and sauté together with 1-2 cloves garlic.
Season chicken breasts with olive oil, salt and pepper and layer them on top of bed of sautéed onions and tomatoes.
Add a few slices of tomato on top of chicken breast (if desired) and season entire pan with garlic powder (if desired).
Cover, let simmer for around 10 minutes, then flip the cutlets and let simmer until middle is no longer pink.
Serve cutlets with the tomato-onion mixture poured over it.
This also works really nicely with salmon, and I sometimes add cracked red pepper to it.
It's not exact, but it's basically what I do.

Saute onions and mushrooms in some oil with paprika, black pepper, garlic powder and salt. When soft take out and set aside. Sprinkle cutlets with paprika, garlic and onion powder, black pepper and some honey. Turn over few times till cooked and serve with the onions and mushrooms. _________________ Do not meddle in the affairs of dragons, for you are crunchy and taste good with ketchup.
