Parmesan couscous
from clean eating magazine
1 cup couscous, leftover is OK too
2 tsp lemon zest
2 tsp lime zest
olive oil
2 cut up shallots
1 1/2 cups water
2 cups kale, optional
1 T lemon juice
quarter cup Parmesan cheese
Cook the couscous or use leftover. Add the ingredients and serve.
