Anyone have a recipe for an elegant fruit salad?

By elegant, I mean not just a bunch of sweet fruits mixed together with a sugary syrup.

Any other dessert suggestions that go well with sorbet?

Layered in trifle cups?
Blueberries, pineapple and melon cut small and layered. drizzle with a raspberry syrup for added sweetness.

How about a pineapple platter?

Cut off the top of a pineapple, and place it upright in the center of a large platter with the fronds up.

Section the pineapple lengthwise into quarters, sixths or eighths, depending on how big you like your pineapple chunks to be.

Separate the flesh from the rind and cut into chunks, but leave them on the rind pieces like sleds.

Place the sleds around the pineapple top like spokes of a wheel. They might not all fit.

Place mounds of different colored small fruits such as grapes, berries, etc in between the spokes.

Serve with toothpicks.

ETA: Sorbet also goes nicely with delicate cookies, garnished with mint sprigs.

someone made me a delicious watermelon and mango salad with lime dressing- I googled it- you cut up watermelon and mango into cubes, add lime juice, a little sugar and some lime zest and chill for 20 minutes, delicous, refreshing and pretty!

I've seen some recipes for fruit salads with mint/lime dressings. Anyone ever try this? Are they good?

Elegant Apple Salad
(Page 98 in The Balabuste's Choice)

Salad:
3 red apples (unpeeled)
1 green apple (unpeeled)
1 yellow apple (unpeeled)
4 seedless oranges (sliced into tiny pieces)
1 11-ounce can pineapple tidbits (drained)

Sauce:
1/2 cup orange juice
1 12-ounce container frozen strawberries (with sauce)
1 package frozen raspberries
2 Tbsps. confectioners' sugar
drop of liquor (optional)

Crunch:
8 ounces roasted filberts (chopped)
1/2 stick margarine
1/2 cup brown sugar
1 cup crisp rice

Directions:
Quarter all apples and slice thinly. Pour juice of pinapple tidbits over apples to prevent discoloring.
Blend all sauce ingredients until syrupy. Refrigerate until chilled.
Place a tall footed glass in center of a trifle bowl and fill with sauce. Layer apples as shown on left picture, page c-16 in colored section.
(I'll try to post the pix. If I can't I'll explain.)
Combine crunch ingredients in a baking pan. Bake at 350 degrees for 5-10 minutes, until margarine is melted and mixture appears roasted.
Cool crunch, sprinkle over salad.

abmom, Thanks for posting the recipe. I've done that salad and it's yum, but it's not what I want to make it a day early and that salad tastes best fresh.

peppernint, (funny that that is your screen name!) is that dressing bitter?

My pleasure. PS. I made it Thursday for shabbos afternoon and only poured on the crunch right before serving. It was delicious.

Really? I found that no matter how much lemon juice I put on, the apples discolor and get a bit mushy. Maybe I will try it again sometime, but for this Shabbos, I don't want to take a chance. Thanks!

Some varieties apples keep better than others after slicing.

I use a very dilute solution of citric acid (sour salt) to moisten cut apple surfaces - I find it's very effective, and doesn't add any flavor except possibly a faint tanginess that would be covered by any kind of citrus dressing.

Just tried a dressing from a recipe I found online. It had lime juice, honey, and mint leaves. It was yum!

Anyone know how much in advance I can make a dressing like that?
