I second the salt-and-pepper noodle kugel.
This is my recipe:

Beat six eggs in bowl. Pour in 10-12 oz medium lukshin (I like Kemach brand the best), cooked. Add salt and black pepper to your taste. The noodles should be somewhat liquidy, if they seem dry add another egg.

I like to cook it on top of the stove in a nonstick pot rather than baking, that way both top and bottom come out nice and crispy. Pour a generous amount of canola oil in pot (1/8 cup maybe?), when oil is heated pour in noodle mixture.Turn fire to low, cover pot. Check frequently; if oil is low add more. In about 1/2 hour, check bottom of kugel, if nicely browned flip over. (I put a large plate upside-down over pot, while holding onto plate, turn pot over and quickly slide the kugel, now turned upside-down, back into pot.) Cook awhile longer until underside is nicely browned and crispy.
This is really good. We like to eat the leftovers cold, it's also good that way.
Btw you can definitely cook it in a nonstick pot, you just have to be verrrry generous with the oil so that it's not sticking and burning...

Salt and pepper Kugel, WITH some fried onions...yum! I usually fry it in a pan, some bake it.
