Delicious Tuna Couscous Salad with Curry Dressing

I made this the other day for dinner, it was so refreshing and delicious for a hot summer evening. And it's SO easy!

The following recipe serves 4.

350g Bag Instant Couscous (I used wholewheat)
Big handful washed and checked lettuce, sliced up.
1 large can Sweetcorn
Handful green olives (optional)
2 cans tuna
Black pepper

Dressing:
1 teaspoon curry powder
1 tablespoon vinegar
salt
1/4 cup oil
1 tablespoons mayonnaise
garlic powder
1 tablespoon brown sugar or honey
1 teaspoon mustard
black pepper

Make the couscous according to packet instructions. Do not add seasoning. Allow to cool.

Mix dressing ingredients, either liquidise or by hand. If by hand, I find it easier to use a fork, and pour the mixed dressing into a bottle, add a lid and shake to ensure it mixes well. Refrigerate until cool.

Assemble the salad into a large salad bowl in layers: lettuce, cold couscous, tuna, sweetcorn. Scatter olives round edges. Pour dressing over and sprinkle with black pepper.

Mix when serving. Best served cold and whilst lettuce is still crisp.
