I’m sitting here eating the best cookies that have ever come out of anyone’s home oven and I’m thinking I should really share the sky rocketing sparks flying experience going on in my mouth right now, so I’m gonna post it!
This is, without a doubt, the single best chewy chocolate chip recipe that ever existed. Heard it all before? Well try these and decide.
THE Best Chewy Chocolate Chip Cookies:
-Mix-
2/3 minus a tbsp, melted butter or margarine. The key here is to use margarine that TASTS GOOD.
1 tbsp of coconut oil (not coconut milk or cream)
2 cups lightly packed brown sugar
2 eggs
2 tbsp hot water
-Add-
2 2/3 cups of flour (pastry flour is your best option here although almost anything will work. I use spelt believe it or not. Nobody even knows the difference – not even my mom who is a professional pastry chef;)
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 pkg of chipits (go with the better tasting ones here. Not the ones that taste like shortening.)
-Bake at 365 F for 8-10 min.-
This recipe comes out even better if you freeze the dough in cookie size portions and bake it at 375 instead of 365. It’s so nice to have cookies that take 8 min to bake right in the freezer as a last min desert when you have guests (or when you just want to treat your self – Iv’e baked only 1 cookie before when I wanted a treat )

No sugar?
I've done the Cooks Illustrated melted butter ones and they really are the chewiest. (Could do them with margarine, we have a soy allergy here)

What margarine tastes good? Do you the names of some brands?
Can I substitute butter?

It really enhances the flavour. The best version of this recipe is with butter and the 1 tbsp coconut oil. You can try without, but theyre just better with.

I just added the sugar to the post. Sry I was typing fast. Its 2 cups lightly packed brown sugar.

Butter is best! I cant recomend a good tasting margarine because I dont know what brands are available where you live. Try a butter flavoured one. Or just make them dairy because its sooooo much better.

I can't find coconut oil, do you think macadamia nut oil will substitute well?

Coconut oil is a saturated fat with the same consistency as butter or margarine. It also has a distict flavour, so I dont think macadamia oil would work. Just use all butter or all margarine instead. All butte is better ofcourse!
