Magic Chinese Restaurant Ingredient?

I don't believe they use msg in the higher class, authentic asian restaurants (only in the cheap take-out places). Look online to get ideas.
Sesame oil, ginger, garlic, rice vinegar, soy sauce, hoisin sauce, lemongrass, some of the spices mentioned above.
In thai food, coconut milk, hot peppers, peanuts
If there is a particular food you want to make, look online at a bunch of recipes - many will not be kosher, but you can get an idea for the general ingredients and proportions, and often you can find kosher substitutes.

It's not a particular food. It's a particular subtle flavor present in lots of sauce-less dishes. I'm almost certain it's msg and I'm not pursuing it, but it will be stam nice to try some of the spice suggestions that I haven't tried before.

Chinese people abroad do use MSG a lot, unfortunately often even in the best places.
My parents live near a huge Asian supermarket (I LOVE IT) and they sell bags of 50 liters Shocked

In China, only cheap places would do that.
