I found coconut milk in the co-op in the soy milk isle.

(I don't know what you are using it for but the one I found had emulsifiers (or something like that) in it. I was looking for it to separate when cold, and it didn't, but it still worked well for what I needed)

I'm assuming you would find mint extract in any store near the extracts. If not I'd assume Shoprite would carry it. But most stores have a huge selection of extracts (I just noticed in the co-op they even had marble cake flavor Confused)

Have you tried the health food store in the strip mall on Cedar Bridge? Maybe they sell it at the big Farm Market down Route 9? I think I may have seen it at an A&P.

Are you looking for heimish brands or will regular brands work for you?

I found my coconut milk at the co-op on James and Sunset. My DH thought of looking in the soy milk isle. It never would have occurred to me. they came in orange cans. Let us know how the ice cream comes out.

The company that makes rice dream and soy dream, started making coconut dream. I've seen them in all the Jewish stores.

Did you buy a carton Coconut Dream? That's a coconut drink, not coconut milk.
Coconut milk comes in a can. It's very thick. And when you refrigerate it, you are left with a heavy solid (the milk), and the little bit of liquid separates.

be good, is there a specialty baking/food store in Lakewood, like the Brooklyn Peppermill store?
You should be able to find the products you are looking for at such a store.

It was in a can and said coconut milk on it.

After refrigerating it did separate and I was able to scoop out the thick part and it did beat. But it didn't separate as much as I had seen in pictures on line. Like there wasn't a clear separation between the the thick and the thin part. I had read that the ones with emulsifiers or certain preservatives don't separate as well as the organic ones. It still made an awesome strawberry shortcake icing (thanks Joy of Kosher magazine)
