I have the gefilte mixture, but how do I fry them?

Just form into bite-size balls and deep fry in a skillet with about 1" oil.
Alternatively, you can make into flatter patties, coat both sides with matza meal and pan-fry.

I find it easier to add a bit extra "binder" (1 extra egg and 2-3 extra tablespoon of matza meal) in the fish mix to minimise the risk of falling apart.
