Is honey healthier than sugar? Can I substitute honey for sugar in cakes/muffins? Will it come out the same?

Honey is still sugar, it's just less processed than white sugar and has some specific health benefits that make it worthwhile to consume. Remember, it has a distinct flavor and texture. Yes, you can sub it in a lot of recipe, but not in just anything. In general, I'd say it's safer to use in cakes than in cookies, where the texture of butter/margarine/shortening is essential to making them come out in a certain way. Try it in spice cakes or muffins.

Dh and fil dont like honey in challah, but I find it yummier and just as sweet as sugar. I usually cut the sugar in most recipes ( Surprised I'm becoming my mother Surprised ) often time it calls for 1 cup or 1 and a half and I just put in half or 3/4 cup and you know what its just as good and you wont be going crazy from a sugar high.

If you're baking crisp cookies, like gingersnaps, replace no more than one-third the sugar with honey. In brownies, honey can replace one-half the amount of sugar and up to two-thirds the sugar in fruit bars. Generally speaking, recipes that call for a half cup of sugar or less can be completely substituted by the same amount of honey.

When substituting honey for sugar, bear in mind the following:

One cup of honey contains contains a quarter-cup of water. As a result, make sure that when you replace sugar with honey you reduce the liquid by a quarter-cup. For example, if a recipe calls for one cup of sugar, use one-cup honey and cut the liquid by a quarter-cup.

I prefer recipes designed for sugar or honey.

honey has some nutritional value that sugar doesn't. however, sugar is not the devil.

Sugar is a carbohydrate. A teaspoon of honey has 21 calories, a teaspoon of white sugar actually only has 16 (partly because it's a purer substance). Most of the calories in honey are from sugar - the sugar content is what makes honey sweet.

There was evidence recently that a lot of our "honey" is essentially high fructose corn syrup. Regular honey is more calorie dense than sugar and not any healthier. Raw honey is supposed to have some amazing health benefits but it is rather expensive and I wouldn't bake with it but it tastes so much more yummy and if you buy the type with propolis on top you have the added benefit of bee pollen.
