I need something to make for my kids to take for snack. They are tired of chocolate chip cookies and I am drawing a blank when it comes to other ideas. Also, I have no non-margarine recipes besides my choc chip one. Anybody have any ideas? Maybe a granola bar recipe?

oatmeal cookies
1/2 c oil
1 c sugar
2 eggs
1/2 c oatmeal
1/2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 c water
2 tsp vanilla
raisins/craisins, choc chips...
bake 8-10 min @ 350

Oatmeal Snickerdoodles
From: Maida Heatter’s Book of Great Cookies
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 lb. (2 sticks) margarine (substitute 3/4 cup oil)
1 teaspoon vanilla extract
3/4 cup sugar
3/4 cup brown sugar, firmly packed
2 eggs
1-1/2 cups old-fashioned or quick-cooking oatmeal
Adjust two racks to divide the oven into thirds and preheat to 400 degrees. Cut aluminum foil to fit cookie sheets.
Sift together the flour, baking soda, salt, and cinnamon and set aside. In the large bowl of an electric mixer cream the margarine. Add the vanilla and sugars and beat well. Add the eggs one at a time and beat well. On low speed gradually add the sifted dry ingredients, scraping the bowl with a rubber spatula and beating only until mixed. Stir in the oatmeal.
Place by rounded teaspoonfuls 2 inches apart on the cut foil.
Topping:
2 tablespoons granulated sugar
2 teaspoons cinnamon
Stir the sugar and cinnamon together well and, with a teaspoon, sprinkle it generously over the cookies.
Side cookie sheets under the foil. Bake the cookies for 10 to 12 minutes, reversing sheets top to bottom and front to back as necessary to insure even browning. Bake until the cookies are browned all over, including the centers.
Let cookies stand on the sheets for a few seconds until they are firm enough to transfer. Slide the foil off the sheets and with a wide spatula transfer to racks to cool.

I posted a snickerdoodle recipe yesterday, and I made it a week and a half ago. It's delicious.
* 3/4 cup granulated sugar
* 2/3 cup light brown sugar
* 1/2 cup oil
* 1 teaspoon vanilla extract
* 1 large egg
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 1/3 cup granulated sugar
* 1 1/2 teaspoons ground cinnamon
Preparation
1. Preheat oven to 400°.
2. Combine 3/4 cup granulated sugar, brown sugar, and oil in a medium bowl; beat with a mixer at medium speed until light and fluffy. Beat in vanilla and egg. (I'm pretty sure I did this all with a spoon, but I don't remember.)
3. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, 1/2 teaspoon cinnamon, and salt, stirring well with a whisk. Add flour mixture to oil mixture; beat just until combined. Shape dough into 30 balls. (I was lazy and I think just added the dry ingredients on top, stirred it a bit together and then did a real mixing with the rest. I shaped the balls as I dipped and placed on the pan, not before.)
4. Combine 1/3 cup granulated sugar and 1 1/2 teaspoons cinnamon in a small shallow dish (honestly, I just sprinkled cinnamon and sugar and didn't measure). Roll balls in sugar mixture, and place 2 inches apart on baking sheets coated with cooking spray or parchment paper. Bake at 400° for 8 minutes or until tops crack. Cool on pans 1 minute. Take any recipe and use oil instead. About 7/8 cup of oil = 1 cup margarine. Maybe a drop less oil.
I usually do choc chip, peanut butter, brownie cookies, thumbprint, or I'll put together a basic cookie dough and decorate them with whatever I'm in the mood of. Sometimes coconut, or an almond/walnut in the middle and drizzled with honey, cinnamon/sugar mix. Be creative.  _________________ The Chanukah licht transcends all.

Take a regular recipe and substitute the butter or margarine w. Expeller Pressed Coconut Oil.
I make the Toll House recipe this way all the time (I reduce the sugar by 1/3) as a double-batch of cookie bars - they are always a hit.

These Mandelbrot are good and not overly sweet. You can probably substitute or leave out the nuts and chips if you want.

Mandelbrot
3 eggs
3/4 cup vegetable oil
1 cup sugar
1 teaspoon vanilla extract
3 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1 cup mini semisweet chocolate chips
1 cup coarsely chopped almonds
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.
Beat together the eggs, oil, sugar, and vanilla extract until well blended. Sift together the flour, salt, and baking powder; and stir into the egg mixture until well mixed. Fold in the chocolate chips and almonds. Form two logs, three inches in diameter, and place onto the baking sheets.
Bake in preheated oven for 25 minutes, then remove from the oven and cut into 1 inch diagonal slices. Lay the slices on their sides on the cookie sheet and return to the oven for 10 minutes. Remove to cool on a wire rack.
