DH bought 3 mangos this week (They must have been on sale but its still not his type to buy 3!!) Now I need recipes for what to do with them. I am looking for something along the lines of a Shabbos dish or something I can freeze for Shavuos. Recipes anyone?

I recently had a really yummy dish- sweet potato and mango "fries" baked in the oven.

I made a salad with mangoes from one of the magazines a few months ago.

Romaine lettuce, or spinach
Roasted squares of butternut squash
Squares of mango
Pine nuts
Red onion, thin strips

The dressing had mayo, lemon juice, garlic, sugar.... I think! It was delicious!

Just use it in a fruit salad or in a veggie salad. (spinach leaves, cut up mango, avocado and tomatoes with red onion and a sweet vinaigrette)

If you have a foolproof recipe for mango sorbet, yeah, go for it.
You might also want to try a red pepper, snow pea (the fat ones, though the flat will work), mango salad that I know turns up on google. Might even be here.

I have a crazy idea.
(Please don't bash, I'm tired and need to go to bed.)
Here is my recipe:
1) Peel mango.
2) Slice mango.
3) Make a bracha.
4) Eat mango!

(Excuse me while I go eat a mango.....I have one in my kitchen and I can hear it calling me....)

I just made a mango sorbet yesterday - pureed the mangoes, added lemon juice (I would probably add 3 T to 3 mangoes), add some water if you need to stretch to serve more people (or coconut milk is good too). Add sugar to taste if you want. I just left it au naturel. Then I made a tofu sour cream (tofu, 2 t lemon juice, 2 t rice vinegar, salt to taste, 3/4 cup oil - that's my guess anyway; I never measure anything) and sweetened it with sugar. I put that over the frozen mango puree. Tomorrow I'll IYH make a strawberry sorbet just like the mango sorbet and make that the top layer.

OR the mango sorbet, all by itself, unsweetened, is DIVINE! Smile

Make a salad for Shabbos, yum. Do you want a recipe for a chicken salad with mango, glazed pecans, grilled chicken, lettuce and a sweet dressing?

You can make mango salsa. Tastes good on fish or grilled meat.

You can cut up a mango into chunck and freeze it.

personally, if it were only three mangoes, I would eat them

if it were like ten, and they would go bad after five days or so, then I would ask /look for recipes

can you guess I like to eat mangos ?

Sorbet... You may want to try adding a small amount of shredded lime peels, and a squirt of lime juice. It really gives nice refreshing taste.

I second just cubing and freezing. You can use it for smoothies, or make mango sauce (just defrost and whizz with some sugar) you can use as a coulis to cheesecake.

But the best is just eat as is, or add to fruit salad.

There're mangos and mangos--my favourite one is Indian alfonso, which is somewhat smaller, kidney shaped ones. They're in season now and intensely sweet and aromatic.
