I'm going to friends for shabbos and they asked me to bring a salad. They themselves make many salads for shabbos so it needs to be not one of their usual. Also they have a lot of kids so a mature salad with sophisticated tastes (interesting vinegars) wont work but neither will anything overly sweet. There will be about 18 people per meal so I kind of ruled out anything like broccoli or avocado.
These are the ones that I would do but they have:
nish nash
taco salad
cabbage salad (both purple and white)
potato salad
sesame pasta salad
marinated salad
any OTHER ideas? or am I being too difficult?

lettuce, red onions, candied pecans and craisins.
dressing: equal parts sugar, vinegar, oil.
Cole slaw
many cucumbers and tomatoes, and some onion, cut into little cubes dressing: lemon juice, oil, salt, vinegar
cucumber salad

Raw broccoli florets (small), broken up Ramen-type noodels (raw), toasted sunflower seeds, shredded cabbage slaw.
Dressing: Wine vinegar, sugar, oil

interesting how 2 out of the 3 suggestions are things that you said wont work for you -pasta or brocolli.
This is a pet peeve of mine- do people actually read the OP?
How about flatbread salad? -that's pretty generic

| cut up hearts of palm, canned artichokes, baby corn, cherry tomatoes and avocado and maike a mayo dressing and it's amazing!

strawberry mango salad:
baby spinach leaves or lettuce, cubed mangos, strawberries, candied almonds
dressing: equal parts oil, sugar, balsamic vinegar

Couscous Salad:
1 pkg. Cooked coucous
1 can chickpeas
Craizins
Sliced scallions
Cubed yellow pepper
Dressing:
Oil
Vinegar
Salt, pepper, sugar, crushed garlic
YUM!!!!!

Hearts of Palm Salad:
1 can hearts of palm for every 2 tomatoes, diced
3 cloves of garlic, finely chopped
1 can of sliced black olives
2 tablespoons fresh basil, chopped
2 tablespoons olive oil
Cilatro (optional)
Salt and pepper
Mix all ingredients well, let sit for 30 minutes so flavors can blend. Can also be made milchig, topped with parmesan or feta cheese.

Oops -- lamplighter, you are right. Shame on me!
You can make an Israeli salad (w/feta cheese if it's milchig). Of course, if you live in Israel, that would be pretty boring.... But kids eat it!

Brown rice salad?
1 c. brown rice, cooked firm and rinsed in cold water
½ c. raisins
½ c. sunflower seeds
2 scallions (or red onion)
½ red pepper, finely chopped
Dressing:
¼ c. oil
¼ c. soy sauce
1 tsp. garlic powder
pinch pepper
marinate
Might not sound so good but it tastes delicious.

Asian Salad:
Cabbage (coleslaw mix)
Craisins
Candied pecans or almonds
Sesame seeds (optional)
dressing: soysauce
so easy!
No-name mango salad:
Lettuce (iceburg or romaine. I personally prefer romaine)
Peeled Cucumbers
Celery
1 Mango, cut into cubes
1 Avocado, cut into cubes
Honey pecans or walnuts (if you don't want it too sweet, you can use salted or unsalted pecans or walnuts instead of honey/candied)
Craisins (optional)
Dressing: any creamy dressing (creamy italian, ranch, caesar, etc.)

Green Bean Salad- My kids love this because they suck out the sauce before eating each bean
Cook 400 gr. green beans in a mixture of: 4 TBSP oil, 4 TBSP vinegar, 4 TBSP sugar, 4 TBSP soy sauce, 2 TBSP sweet chili sauce, 1 clove crushed garlic and a little water.
Simmer for a few minutes, until green beans reach desired done-ness.
Make a day in advance so they absorb the sauce.
Sprinkle toasted almonds before serving.
Root Vegetable Salad
Chop up 1 kohlrabi, 1 RAW beet and 2 carrots into matchstick pieces.
Make your favorite non-mayo dressing (citrus-flavored or balsamic work), toss together and let marinate at least 24 hours.
Can add red onion and/ or walnuts.

1 12 oz shredded lettuce
1 red onion
cherry tomatoes
1/2 c candied pecans
DRESSING:
2 Tbs water
2 Tbs ketchup
1/3 cup oil
3 Tbs sugar (or splenda)
3 Tbs vinigar
2 cloves crushed garlic
salt and pepper

| How about a marinated salad? It's different colored peppers, baby corn, mushrooms and purple onion with a vinegar dressing... It goes really well here!
