Can anyone give me ideas for easy, healthy meals that I can make before returning to work, freeze and serve to my family?
I'd like to just be able to pull it out of the freezer in the morning and then heat it up before serving at night. I don't mind making a side dish, like rice, in my rice maker, but I'd like the meat and veggie parts to preferably be done in advance. Thanks!!

Bread chicken or chicken cutlets and freeze raw in pans. Pop it in the oven when you get home and viola- a 'fresh' supper!
Meatballs freeze great, as well as meatloaf, blintzes, etc...
