This is really good. you could probably skip the flaked almonds if you don't have.
almond slice (sorry this is all in weights not cups, you will need scales or use a conversion chart. 4oz should be half a cup)
Ingredients
Pastry
175g/6oz Plain Flour
Pinch of salt
75g/3oz margarine
Cold water
Topping
125g/4oz margarine
125g/4oz Golden Sugar
125g/4oz Ground Almonds
75g/3oz Strong White Flour
2 eggs
2 tsps Almond Essence
2 tbsps Rasberry Jam
Shamrock Flaked Almonds
Method
Sieve the flour and salt into a bowl. Rub in the margarine and add sufficient water to make a soft dough.
Turn onto a lightly floured board, roll out and line a Swiss Roll tin.
Cover and leave in the fridge while making the topping.
(I make the pastry in a food processor - process everything except water and then add water gradually and process till smooth)
To make topping
Melt the margarine in a pan over a low heat. Remove from the heat and add the sugar, ground almonds and strong flour.
Mix well, then beat in the eggs and almond essence. Leave to cool a little.
Remove pastry from the fridge, spread the jam over the top of the pastry base.
Pour the top-ping over the jam. Decorate with flaked almonds and bake in a pre-heated oven 400°F/200°C/Gas 6 for 35-40 minutes until pale golden in colour.
When cool, cut into slices.

I made a delicious shnitzel with ground nuts over Pesach.
Boneless chicken cutlets
Potato starch (tho now just use flour!)
Ground almonds (I used 6 oz. 2 bags for 3 lbs. chicken)
eggs (I needed 3)
salt, pepper
Season flour with salt & pepper and mix well with fork. Dredge chicken in flour, then eggs, then nuts. Fry up in olive oil till browning then transfer to 350 degree oven to cook through. (Nuts will burn by the time chicken is cooked through if you fry it all the way.)

I also have an AMAZING nut cake recipe. Not mine, from the Internet. Sorry I can't remember which site. It's KFP but I'm adding it t my regular repertoire! Shnitzel, too.
INGREDIENTS
9 eggs, separated
1 1⁄2 cups sugar
2 tablespoons oil
1 teaspoon lemon juice
2 (7 ounce) packages ground nuts
INSTRUCTIONS
Preheat oven to 350 degrees F.
In an electric mixer, beat the egg whites until stiff.
In a separate bowl, beat yolks with sugar until pale, creamy and thick. Beat in oil and lemon juice. Fold yolks into whites. Fold in nuts.
Pour into greased tube pan and bake in preheated oven at 350 for 1 hour. Open oven door and let cool in oven 10 minutes before removing.

I also did something kinda awesome with my ground almonds. I made a sauce for salmon with olive oil, ground almonds, lemon juice and honey. I may have added something else (I forgot) but it was pretty good! _________________ Read this before responding: http://www.paulgraham.com/disagree.html

I did this tonight with ground walnuts I bought today
It's mock liver with peas:
4 hard boiled eggs,
1-2 onions suateed,
15 oz can sweat peas, drained,
1 1/2 c ground walnuts,
Tsp salt,
dash pepper,
Mix all with blender. It's yum in a blinze or as an entry with lettuce beneath...

I just made these cookies and they were very good.
Brazil Nut Cookies
3/4 c margarine
1/2 c sugar
1 egg
2 t vanilla
1/2 t salt
2 c flour
2 c finely ground brazil nuts
Heat oven to 350/180. Mix altogether. Ungreased cookie sheets, roll into balls and bake 20 min. Cool a little and roll in confectionary sugar.
I used ground almonds.
