I bought a small mayo for pesach that I did not open. Do you think it would last until next year?

If the expiration date is that long, it should be fine in a cool dry closet.

Check the date. Smile We don't use mayo, but oil is often good for two years. I just make sure it won't be expired or close to expiration (I have had bad experience with oil spoiling even though the date was still good and imagine mayo could do the same) before the next Pesach.

I just wonder why chance it? The only different ingredient is the oil, so taste-wise shouldn't be noticeable. If it's a matter of cost, I think you'd rather forgo the few dollars now than either having to deal with the spoiled mayo next year via cost or illness c"v.
