Sliced zucchini,eggs and Mayo with spices

In what proportions?

I replace potatoes with zucchini in any potato kugel. sometimes I do some potato some zucchini, depending on my mood.

4 medium zucchinis, 2 carrots, 1 potato - all grated.
1 large onion, diced and fried.
2 eggs
lots of salt

bake on 350 for 1 - 1.5 hrs. (I made 4 times the recipe and I used the huge size pans so I think I baked it longer).

3 medium zuchini or 1 pkt frozen zuchini
1 small onion
2 eggs
salt
pepper
1 tblsp oil
shake of potato starch

fry the onion
slice an boil up zuchini until soft, about 20 mins
mash adn drain zuchini, mix with onion, eggs, oil, spices and starch
pour into dish, bake at 375 for about 30 -40 mins
this is really yummy
