Any uses for leftover beet juice?

I mean the liquid left after cooking them. I've found really creative, tasty recipes for the beets themselves (which have made them more of a fav' in my house) but I'm left with this liquid. I know it's full of vitamins and stuff so I hate to just throw it out

anyone out there with more than a bit of creativity?

Use it in soups or for natrual food coloring

while creatively emptying my freezer, I discovered that this blends really well with my homemade pasta sauce.

Mix it with ground horseradish for some really sharp chain.

My friend used to use it to make pink Pesach cupcakes for her daughters' birthday party (they were born on Pesach.)

Some drink it:

You can cook up a loaf of gefilte fish in it. It gives the outside a nice tinge, inside stays usual color.
