In past years I've mainly used the Pesach Cottonseed oil. It is really so heavy and gross that I can't stand it. I was wondering if anyone uses light olive oil for baking, etc.? Also, what about the various nut oils -- which ones are mild and not bitter tasting and what are they best used for?

I use hazelnut oil for baking, and olive oil for dressing salads.

Is the hazelnut oil mild tasting or does it give a strong nutty taste to the baked goods? Is it at all bitter (I believe walnut oil is bitter, but I've never used it myself)?

I haven't started baking yet, but my recollection is that it does not impart a nutty taste to non-nutty cakes. I also hate these oils, but my notes say hazelnut was the best.

I'm totally unfamiliar with that. Is it lighter (I'm used to canola oil) than the cottonseed oil?

I use Hollywood safflower oil -- yes, it really is light enough for year-round use. They do a Pesach run once a year. Here's a link: Hollywood saffower oil

I really like hazelnut oil best , it is not bitter at all unlike walnut oil which is bitter. it has a very mild light flavor. much nicer than cottonseed oil. only downside is its price.

I use extra light (not extra virgin) olive oil in my baking, cooking, salads... Works wonderfully. Light and takes on the flavor of the food kind of like canola but better.

For deep frying I use cottonseed oil.

Okay, thanks to all of you, I have bought Safflower Oil, Hazelnut Oil & Extra Light Olive Oil.

Which do all of you recommend for:
Cakes
Brownies & Blondies
Kugels
Sauteeing vegetables
Frying latkes; potato or matza meal (not sweet)

What uses have I missed? Obviously salads will be the light olive oil. What other things?

hazelnut oil for cakes, brownies and blondies
extra light olive oil for kugels and sauteeing vegetables
safflower oil for frying (has a high smoke point, comparative to other vegetable oils)

Cottonseed oil taste terrible in baked goods. You need a more expensive, better oil for baking.

It's fine for eggs or frying potatoes, though.

You can't use hazelnut nut oil for the first day so Pesach, remember. We don't eat nuts the first days. I'm not sure it pays to buy it, even.

I'd go safflower.

We use nuts the first days. I have no problem with that. I make other things with nuts for the first days. In fact I've never heard of not eating nuts (and I've got 12 married kids that bring me all kinds of minhagim -- though all in the litvish/yeshivish velt range).

I don't think there is anything we avoid the first days and not the rest of the time. Never heard of it.

We're not Lubavitch and I have never heard of this.

The only thing we don't eat until after the 2nd Seder is the actual roasted Ka'arah drumsticks.

Okay, we wouldn't eat from the "zeroa" (we use chicken necks) during the seder because we don't eat roasted meat then, but we would eat them during the day over the first days.
