Other than soup and salad what healthy side dishes do you make? family members are not fans of tomato based dishes like ratatouille. it's my second year doing pesach and im still trying to figure out a not so unhealthy pesach??

mushrooms and onions

brocolli kugel (with eggs, mayo and potato starch)

I bought a steamer last year and steamed carrots and sweet pot.
Though you can steam any veggies

Pineapple slices with mashed sweet potatoes on top (it holds as an ice cream shape by adding eggs) and sprinkled with chopped walnuts...baked in an oven to caramelize it all together...yummy and pretty!

I did this 2 years ago and do it again since, take frozen brocoli and coliflower put it in a crockpot bag and stick it in the crockpot on Yom Tov morning by lunch it's nice and steamed and yummy! For a variety you can then take a frying pan, fry up some onions add some already cooked eggs that are chopped up and add the brocoli and coliflower, toss with a bit of garlic, salt and pepper. A really healthy and delicous dish. if you want to make it even healthier just take out the egg yoke and leave the egg whites. During the year you can even put in some bread crumbs from challah but you can leave that part out anytime. It's a great receipe that everyone in my house likes.

I've been surviving off of chicken salad.

Add veggies, especially hearts of palm!!

If you eat quinoa, it's a great one!!

popcorn cauliflower? sweet potato? veggies Smile

Honey roasted sweet potatoes with thyme
Carmelized Carrots
Roasted red peppers and portobellos with a balsamic reduction
Red Cabbage Salad with mandarin oranges and scallions, carmelized almonds
Quinoa Israeli Salad

Honestly any non kitniyos veggie will do. Just make it into a cold salad with oil and vinegar or season it and roast it for a hot version.

- Braised fennels or courgettes. Sautee first and add 1cup water, season with salt, pepper, chicken soup powder, cook till soft but not mushy, turn of flame and add a nice squeeze of lemon juice.

- Sweet and sour carrots and celery is also our staple for the holiday.

- Boiled/steamed broccoli or cauliflower topped with toasted almond flakes

- Roasted peppers (make it multi-coloured)

sweet and sour braised carrots and celery: peel and cut carrots and celery in matchstick sizes. Heat 1tbsp oil and sautee for 5min or so. Add 1 cup water, 1-2tbsp sugar, cook for 15-20min til vegetables are done. Turn off flame and add juice of 1/2 lemon (more if you want it tart). Can be served at warm or room temp but this doesn't freeze.
You can use more sugar if you like (my family like it less sweet). This recipe is for about 3 large or 5 medium carrots and 3 stalks of celery, yields enough sides for about 10 people.

So many different salads you can make if you use lettuce/leftoever Marror.

My daughter made a delicious red cabbage salad with colorful peppers, pecans (omit to save money) and some dressing - I don't have the recipee handy.

You can make lettuce and peppers and tomatoes and vary the dressings if you use these things.
