Salmon pieces on lettuce salad
Whole grain bread with tuna, pickles, tomatoes
Mushroom onion omelet, techina, shredded carrot salad

I work from home, try these ideas
Cook extra large pot with vegtable soup at the begining of the week. Set some aside for 2 weekday dinners, the rest freeze in medium size containers for lunch. I warm up a container for myself and baby almost every day.
Lunch when my children are home is usually pasta.

If you're at home, usually the best things to make for supper are the '5 minute prep-stick into the oven and bake 1-2 hours' kinda meals. _________________ Really Awesome Mom!

I always make a huge dinner and the next day we all eat the leftovers.
but if there ever is none, then we do fried eggs, peas, tuna/lox/egg salad/pb and J sandwiches on whole grain bread, and homemade fish sticks using salmon cut into slices, coated in flour and fried.

Lately I make cause my son l oves a baked potato in the micro split open a little butter smash and add cheese for myself I add canned mushroom or sauted veggies and cheese very filling.
I do soups, leftovers, pasta with cheese frozen pizza when I am really good a big salad with beans or cheese as protien or on monday leftover fish from shab

I just made a tripple recipe of calzones (pizza pockets), 1/2 w/ pizza filling & 12 w/ sautes veggis & cheese. I just take 1 out of the freezer put in in the (microwave) toaster oven.
A pot of soup in the fridge is always good for me. (many of which can be frozen in portion sizes)
BTW this thread is good for the SAHM, WAHM, working mother/wife .........

baked potato with meatballs and cranberry sauce
rice noodles and stirfry
cream of veggies (made with left over rice ,1 browned onion and any veggie you like)
mejadara lentils and rice ,my toddler loves this with yogurt
lasagna
homemade shepherds pie
chicken pot pie
make extra water challah dough and save it for pizza (I have the kids roll it as an activity)
mac n cheese made from scratch
mash potato served with chicken legs cooked with 1 onion and a bag of peas and carrots plus 1 cup of water. _________________

Eggplant Parmesan Pasta
Slice up an eggplant and coat with kosher salt - let sit for at least 20 min and then rinse off. Saute diced onions and minced garlic in oil till soft. Dice up the eggplant and add. Cover and keep stirring every so often until soft. Add tomato sauce/paste, stir, and let cook a little longer. Add milk and some grated cheese - cover till cheese is melted, mix everything together and serve hot over pasta. REALLY YUMMY!

This is what I make for myself if I have patience:
baked potato with tuna
scrambled eggs sandwich
salad and bread
tuna panini (basically a tuna sandwich in the sandwich maker lol)
pitta pizza
leftovers from the night before
pasta and cheese
instant couscous with spices and cheese (if im in the mood of cheese otherwise just ketchup)
yoghurt with oats and raisins mixed in.
