Hi everyone,
Anyone have a bean and barley soup recipe to share, my DH keeps hinting for it. He ones had it in a restaurant and its his favorite soup... he mentioned it had small chunks of meat, I hate meat so nothing with meat please, I would use chicken cutlets instead.

Any simple good recipe would be great!

I make a parev barley soup:

fry onion
add leek and fry for 5mins
add 1/2 - 1 cup of barley (add as much as you like I do between 1/2 - 3/4)
Add one spoon flour
mix.
add water to cover at least 1.5" over the barley (5-7 cups) If you see that as it boils it is too thick, add more water.
cover and leave to boil on a low flame for about 1/2 hour.

It is very easy and quick. You can try adding pieces of chicken to it It would probably be good.

Sorry I don't really have measurements but here goes:

Mix together navy/pea beans and barley, whatever ratio you like. After soaking for a while,put in pot, with water covering beans by a few inches. Add generous amounts of onion powder, garlic powder and paprika. Add salt and black pepper. Add a splash of light olive oil. Heat till boiling, then turn down to simmer for a few hours. Once the beans/barley are done, taste soup to see if more spices are necessary.
I never made it with chicken but I can see it tasting good together...
