| I have a zucchini recipe that I cut it into chunks. If you want it, please tell me because I can't get to it now anyway. Also, any vegetable that needs to be shredded is pretty easy to do by hand.

Anon's zucchini kugel on this site can be made with cut-up zucchini instead of grated. Really easy, no food processor necessary.
You can also probably find a kugel made from frozen vegetable mix online.

I agree. Anon's zucchini kugel is great. Zucchini is sliced into super thin half moons. No need for onion soup mix. Just add coarse salt until the batter tastes really good.
Same for Mishpacha's onion kugel. Onion halved and then sliced really thin. Also salt to taste, not as indicated. _________________ Really Awesome Mom!

I just made a broccoli kugel yesterday. very very easy.
for every 16 oz of broccoli you put in 1 egg, 1 tbsp corn flake crumbs, 1 tbsp mayo.
saute an onion, then saute the frozen broccoli ( I used the chopped I found it easier) when its done add in to the mixture and put salt and garlic to taste. sprinkle corn flake crumbs on top. and bake at 350 not sure for how long prob like a half hour to 45 minutes.
its really delicious

here is an easy YUMMY recipe
1 bag eden chopped broccoli
3 tablespoon light mayo
2 tablespoon oil
2 tablespoon onion soup mix
2 tablespoon breacrumb
2 tablespoon flour
3 eggs
mix together all ingredients (make sure it is well mixed)
and put into the oven at 350 for 1 hour (or until it is baked through - I usually feel the middle - if it is solid I remove).
Enjoy - my kids go CRAZY for this kugel...

Hi,
This came from Hamodia Pessach , It does take some time to grate all the veg and saute, (you can saute with water instead of oil) but it is delicious!!
3 cups chopped onions (about 3 large)
1 cup chopped celery (about 4 stalks)
3 cups grated carrots (about 4 large / 3 extra large)
1 red or green pepper (I like the red for color)
20 oz package frozen spinach (I use the bag of 32 oz. chopped spinach) - defrosted.
6 eggs well beaten
1 - 1 1/2 cups matza meal (whole wheat)
salt, pepper, garlic to taste
oil for sauteing.
Saute onions, carrots celery and pepper until soft (if very wet drain)
add spinach and mix well.
saute another 5 minutes.
remove from heat.
Add eggs, matza meal and seasoning - mix well. (I mix in the baking pan).
bake in greased 9x13 pan. 45 min. - 1 hour
Cool 10 min. before serving.
Enjoy!!
