I prefer lists for chinuch, as it teaches you and your children what to look for. People may not always live in a place with hechsherim on everything. There are also fake hechsherim. I check everything.

Kashrus organizations decide on which standard they will use and what kulos/shitos they will rely on when giving certifications. Chalav stam is one of the areas where the OU has decided to follow the opinion that it is a chumra, not a halacha.

This.

That is why you need to check into each hechsher before deciding to use it. Some may be using heterim that you don't hold from and that hasgacha would not be for you.

According to some. And according to others its halacha. Especially when people take into account procedures done to animals today that many hold would make cs milk not allowed, even according to Rav Moshe.

(My parents eat cholov stam, so I'm not saying they are wrong, but dh's family holds its halacha and won't eat off of CS keilim or feed it to their children)

The OU giving a hechsher doesn't mean they are wrong. It just means they are following one opinion. There are a few things with an OU hechsher we don't eat, not because the OU is wrong, but because we hold otherwise.

why does that make it halacha and not a chumra.. halacha is more black and white

DH's family/rav says its assur, no exceptions. Its pretty black and white. But the reasons they have why it is assur aren't hold by everyone.

If you believe what is done to the cows (I don't understand it fully) makes the milk no longer kosher, then Chalav Stam would be not kosher, not not as good as chalav yisrael (if that is prober english). This also means that we wouldn't eat OU DE food, or food cooked on CS keilim. (We do eat food cooked on clean keilim by my parents for shalom bayis reasons)

There are other ingredients besides dairy that OU allows that some believe is halachicly not allowed and others believe it is fully permissable (for example we don't eat OU food with confectioners glaze, raisins, grape extract, Cream of Tartar, among others).
