We're having a mini reunion and I'd like to bring along a cake. I need it to taste good, look nice and be easy to make (no cake mixes)

Or make that cake in a bundt pan. And glaze it -- I have a really good glaze for it if you're interested.

This recipe may have some small variations from the original Hershey's recipe, but it is very, very good.

2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/3 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup soy milk
1/2 cup oil
1 cup boiling water
2 tsp. vanilla

Mix dry ingredients and then add the rest. Bake in well greased and floured Bundt pan for 50 minutes at 350 degrees. Remove from pan and cool completely.

Glaze
1 1/2 tbsp. margarine
2 tbsp. brown sugar
1 tbsp. soy milk

Boil and cool completely, then whisk in:
1/2 cups confectioner’s sugar
1/2 tsp. vanilla
approx. 2 tsp. soy milk (add gradually just until right consistency)

Put waxed paper around cake and pour glaze over cake.

OOTBubby Thank you so much for posting the recipe I just wanted to know, how long does soy milk last once opened? What other recipes can it be used for?

Thanks for posting your recipe. For some reason my marble cake don't come out - the chocolate tends to settle on the bottom.

I don't know for sure. I either use the small individual boxes so I use it all up, or I freeze whatever is left over. Use it in anything that calls for coffee rich or milk or milk substitute. You can also use almond milk.

Soy milk should be used within 7-10 days after opening.
