I am looking for a way to serve eggplant as a side for supper. I need a recipe without onions and not deep fried. Usually I make ratatouille, but can't without onions.

babaganush just make it with garlic.

breaded fried eggplant with ascoop of rice

My favorite is a Chinese recipe. Peel eggplant, slice, and cut slices in 1/2 or 1/3. Crush 4 cloves garlic and cut or crush in garlic press 1" cube of fresh ginger. Set aside. Mix 1/4 C water or soup broth with 3 T soy sauce and 1 t sugar.

Heat 3 T peanut oil in pan or wok. Add garlic and ginger. When just starting to brown, add eggplant and stir. When eggplant is coated, add sauce. Lower flame, cover, and simmer for 15-20 minutes.

Moroccan Eggplant Salad

Eggplant salad recipe:

Eggplant, cubed
red pepper, diced
parsely, chopped
garlic, minced
black pepper to taste
dash of salt
vinegar or lemon juice (I prefer lemon juice for this)
olive oil
flour, garlic powder, black pepper for dredging
small bit of oil

Dredge eggplant in seasoned flour, spread on a cookie sheet. Drizzle oil over and toss to coat. Then bake until the eggplant is golden brown and crispy.

Drain on a paper towel and put into a bowl. Add the red pepper, parsley, garlic, salt and pepper, vinegar/lemon juice and olive oil. Mix, refrigerate overnight and serve chilled.

Thank you all. These are nice ideas. In th eend, I had to go out and got back justbefore supper, so eggplant will wait until tomorrow....
