Eggplant Rollatrini
From Prevention magazine
2 Eggplants
Tomato sauce
Cup Ricotta
Basil
Trim eggplant and cut lengthwise into 14 pieces. Broil until brown.
Top each eggplant slice with ricotta and a sprinkle of herbs. Roll up and place in pan that has been spread with 1 cup tomato sauce. Bake about 10 minutes at 425.
