Need to use up some Almond milk, any ideas?

I have a half a carton of almond milk left and I want to use it up. Something delicious pareve and milk tasting maybe. Any ideas?

Any place where you would use non dairy creamer. Soups, desserts... do a search on almond milk here, too.

What about rice pudding? You can repurpose any past-their-prime apples, add a ton of cinnamon and, uhmm, invite me over! Kthxbai.

Blended soup. You can sautee/cook whatever veggies you have, add the almond milk, water, and spices. Cook and blend. I like sauteed onions and asparagus, or broccoli, carrots, zucchini.

Use it instead of juice or liquid in any cake or cookie batter. I do it all the time.

Use it in Hershey's chocolate cake,
In pancakes.
French toast.
Omelettes.

Mmmm... muffins!

All my extra soy-milk and almond-milk get turned into muffins. Mostly because they mix up easily, bake quickly and freezer really well. They're perfect to pull out for 'breakfast on the go'. Smile
