Here is my favorite recipe for tongue
1 Pickeled Tongue Cooked And Sliced
1 Medium Onion Chopped
2 tablespoon/s Oil
1 1/2 cup/s Ketchup
1 cup/s Brown Sugar
1 1/4 cup/s Water
1 can/s Crushed Tomatoes
Preparation
Saute onion in oil for a few minutes. Add the rest of the ingredients and simmer for 10 minutes. Add the tongue slices and cook for another 15 minutes.
If you need to cook the tongue, put it in a big pot and cover with water and add a 1/2 cup sugar. Cook until the tongue is soft (stick a fork in it). Change the water after about 1 hour. Cool slightly and take off the skin. Cover the tongue and put in the refrigerator to cool. Once cooled slice according to the thickness you like.
If you like a more apricot sauce here is another version

1/2 cup ketchup
1/3 cup vineger
3/4 cup water
2 tabsp lemon juice
1/2-3/4 cup suger
1/3 cup brown suger
boil all ing for 5-10 min pour over tongue.renjoy

I use pickled calves/veal tongue. I boil the tongue(s), with a Tbsp. of vinegar, until tender. Plunge into ice water. Peel, and refrigerate.
Then I slice, and simmer in a sauce made of:
1 can jellied cranberry sauce
1 can Rokeach tomato sauce with mushrooms
1 can pineapple chunks with syrup (I use the heavy syrup, but can try the one in it's own juice)
Simmer for 1 hour.
Easy and Delicious!
