I had over yom tov eggplant that was fried with onions and it was tomato based
it was the type of salad you eat with challah,
does anyone have a recipe for something like that

Not really like that, but I fry eggplant with garlic until it's really soft and then mix it with sweet chilli. It's yum (especially on warm challah) and really easy!
