You can make a creamy garlic dressing with mayo, garlic, sugar, salt and pepper. Thin with some water. Shake very well in covered container.
Many salads are great with just olive oil, garlic powder, salt and pepper.

Is mustard ok? You can make a honey dijon dressing with honey, mustard, oil or mayo, and garlic powder.

Sorry but I think this is hillarious if someone won't use lemon juice or vinegar, but will use mayo or mustard that are made with vinegar, because the vinegar is added in the factory instead of in your home.
Maybe something with soy sauce, oil, and sugar. Or with orange juice.

honey, grain mustard, olive oil, chopped dill
mayo can be made without vinegar btw! all you need is eggs, oil and if you like some mustard or garlic for flavour
also orange juice, salt, olive oil and a bit of sugar is lovely on a sweet / fruit spinach salad with red onions

Again, as I said, mustard spread is made from two primary ingredients- mustard seeds, and vinegar. If your minhag is no vinegar, you shouldnt use mustard either.

Some people have the minhag not to have vinegar or lemon juice because of it's sour taste. Mayo has vinegar processed in it but it is not sour in taste and has been through a process. Others are more strict and don't have mayo either. It's a beautiful minhag that different people keep to different levels, let's not find it "funny".

lamplighter, I'm with you! The idea is to avoid sharp-tasting foods like pickles and horseradish.
It's a beautiful symbolic way of asking Hashem for a sweet year.
