I need ideas for vegetable side dishes besides for cut up vegtable salad salad and green bean
any broccoli/cauliflower recipes? any other veggie ones

frozen veggies - just dump in a pan with a little water soy sauce galic powder and onion powder

Cauliflower popcorn from pink susie fishbein cookbook is good
there's a really good garlic cauliflower recipe from binah magazine
sesame broccoli from kids in the kitchen
let me know if you want any recipes

cut up fresh broccoli, baby bella mushrooms, onion, sugar snap peas, carrots and red peppers. (You can really do any mix of fresh vegetables that you like) sautee together till soft but not mushy. then add 2 cubes frozen garlic, soy sauce and black pepper. Let it cook for 5 minutes and serve hot! it's delicious!!

Vegetable Fries (so delicious and vibrant colors)

· 1 extra large sweet potato, about 3/4 pound
· 2 large parsnips, about 3/4 pound together
· 1 extra large beet, about 3/4 pound

· 3/4 - 1 teaspoon kosher salt

Preheat oven to 400°.
Peel all vegetables. Rinse and dry well. Cut into 1/4 - 1/3-inch-thick fries. (Use gloves when peeling and cutting beets.)
Toss sweet potato and parsnip fries together with 1 tablespoon of olive oil, and arrange in one even layer on baking sheet.
Toss beet fries separately with remaining 1/2 tablespoon olive oil. Arrange in an even layer on a second baking sheet.
Bake uncovered for 40 minutes, rotating the baking sheets halfway through.
Remove the sweet potato and parsnip baking sheet, and leave the beets in the oven to bake for another 6 minutes.
Toss all three colors of fries together with the kosher salt. Serve immediately.

Zucchini Sticks

-2 zucchini
-2 small garlic cloves, crushed
-olive oil
-salt and pepper to taste

Wash and dry zucchini. Cut off ends. Slice into little sticks.
Toss with crushed garlic, olive oil, salt and pepper to taste on a baking sheet.
Bake uncovered in oven preheated to 400 for about 18 minutes, until crisp-tender.

sweet potato fries - just slice sweet potatos and put them in a bag, pour a little oil and garlic powder. Mix to cover well and put on a baking sheet. Bake at 350 for about 45 min.

corn on the cob - favorite in my family - just put in water with some salt and boil for 10 min

Stewed zucchini.

saute onions, add approx 11 oz tomato sauce, 1/4 cup water, lemon juice (tablespoon?), sugar (1-3 tablespoons), garlic powder. Bring to boil.

add approx 6 sliced zucchini, turn down flame and cook until soft.

this is just approximate, I don't have the original recipe in front of me. it's delicious. and you can freeze it.

Garlic broccoli: Clean the florettes and boil till al dente, drain well. In a small skillet, heat 1tbsp olive oil, salt, and coarsely minced/chopped garlic till garlic starts to turn pale golden. (Be careful, garlic can burn quickly). Turn off the flame, tip in the broccoli and coat well.

Oriental broccoli: cook the broccoli as above. Toss with dressing made with 1 part sesame oil, 1 part soy oil, 1 part OJ. Sprinkle with sesame seeds if preferred. Good served room temp with pasta or rice.

Cauliflower cheese: make cheese sauce with roux (sautee flour with butter, gradually add milk to thin, season with salt, add shredded cheese). Boil cauliflower florettes, cover with cheese sauce.

Cauliflower with sauteed onions: Sautee 1 large chopped onion in oil till onions turn light brown. Toss with cooked cauliflower.

Courgettes/zucchini--ratatouille, slice and simply sautee, grate and make into latkes.

Carrots--latkes as above. Cut into small chunks, cook with water and parve chicken soup powder. Grate coarsely, sautee and make into fritatta.

Peppers--ratatouille with zucchini and eggplants. Roasted peppers (trim and quarter, put in baking tray skin side up, sprinkle with salt, broil till the skins are charred. Cover the foil into a package to let steam. Peel off skin once cool enough to handle.

Okra--cook with chopped onions and tomato sauce. Boil al dente and sautee with butter. Make a batter with sliced raw okra, egg, flour (gram flour preferably), cumin seeds, curry powder, chili (optional), fry into fritters.

Fried Eggplants--peel off skins in stripes. Slice thickly and cut in halves or quarters. Sautee (trick is to add salt first and a bit of water) till soft. You can add A) chopped garlic and tomato sauce, or B) minced ginger, chopped scallion and soy sauce, or C) keep it plain (great for stuffing pita sandwich).

How about vegetable lo mein? here is the recipe

1 box Linguini Pasta
1 Large Onion Diced
2 Shredded Carrots
1 Red Pepper Thinly Sliced In Strips
1 Yellow Pepper Thinly Sliced In Strips D
1/2 pound/s Snow Peas
6 tablespoon/s Oil
1/4 cup/s Soy Sauce
1/4 cup/s Sugar

Preparation
boil water and cook linguini according to package directions. saute onion and veggies in oil . add soy sauce and sugar. add a little chicken soup mix and salt and pepper to taste. cook until soft. mix with the linguini and serve warm.

here is also a recipe for spinach/broccoli quiche. you can make it w/o the crust and you can substitute oil for the margarine (if it bothers you).

1/2 Bag Frozen Broccli
1/2 Bag Frozen Spinach
1/2 cup/s Mayonnaise
1 1/2 tablespoon/s Flour
3 Eggs
1/2 cup/s Soy Milk
3 tablespoon/s Onion Soup Mix
2 tablespoon/s Margarine
1 Pie Crust

Preparation
Defrost the spinach and broccoli. Drain the spinach. Mix all the rest together. Add the spinach and broccoli. Put into a pie shell and sprinkle cornflake crumbs on top. Bake at 350F for 45 minutes.
