I just started an egg-free diet (for my nursing baby) so I don't plan on buying eggs in the near future.
I have one egg left that I would like to use before it spoils.
Does anyone have a cake/cookie recipe that uses one egg?

Greeneyes recipe. They look great , I'll let you know how they came out after my husband eats them.
The choc cake recipe looked too chocolatey for me, but thanks ra_mom!
