You mean cole slaw?
I make a version with a bit of oil instead of the mayo. And make the dressing as usual - lemon juice, sugar, salt, black pepper. _________________

This is really good:
1 head cabbage (I usually use 1 package of coleslaw and halve all the other ingredients)
3 scallions
a package of ramen noodles, crushed
1/2 c oil
1/2 c vinegar
1/2 c sugar (I think next time I would use less, it's was too sweet for me)
1 tablespoon soy sauce

This one is delicious!
-1 (16 oz.) bag white shredded cabbage
-2 scallions, thinly sliced
-1/3 cup slivered almonds (toasted in the oven at 450 for a few minutes)
-sesame seeds
-3/4 cup boiling water
-1/4 cup sugar
-1/4 cup oil
-1 tsp salt
-1/2 tsp black pepper
Combine boiling water, sugar, oil, salt and black pepper. Set aside to cool.
Arrange shredded cabbage, sliced scallions, toasted slivered almonds, and sesame seeds in a salad bowl. Pour dressing over salad, and toss well to coat. _________________ Really Awesome Mom!

This one is less "coarse" than the usual non-mayo coleslaw, without having to add much salt.
1 head cabbage, shredded finely
juice from 1 lemon (or reduce if you want)
3tbsp olive oil
1 teasp salt, pepper to taste
chopped parsley (optional)
Put shredded cabbage in a large colander. (You may have to do it in two batches.) Pour a kettleful of boiling hot water. Drain well. Mix the rest of ingredients, pour over cabbage. Let it marinate at least 1hour before serving.
It's also not sweet (good for someone on diet or diabetics), you can add a bit of sugar to the dressing. You can use regular vinegar (rice vinegar or cider vinegar works fine) instead of lemon juice but use a bit less.

1 bag cabbage (red or white)
1/3 cup vinegar
1/3 cup soy sauce
1/3 cup oil
1/4 cup brown sugar
1/4 cup sliced/slivered almonds
1 T. sesame seeds
toast nuts and seeds. set aside. boil dressing and pour over cabbage. If you like it crunchy, mix right b4 eating, if not, let it marinate in advance and sprinkle nuts/almonds b4 serving.
This is really yummy and "different"
