I make the one on the back of the Goya can.
Offhand it's
can chickpeas
1/2 cucumber diced
1/2 red pepper diced
small red onion, diced
3 tbsp olive oil
1 tbsp balsamic vinegar
tsp garlic powder
tsp oregano
salt, pepper
I'm hazy about the dressing proportions, b/c I always multiply it, but I can check exactly if you want.

I make a salad using chickpeas that is similar to the one served at the "Aroma" cafe chain here in Israel.
Romaine lettuce
chick peas
tehina (not that awful American stuff, please!)
hard-boiled eggs
tons of fresh parsley
red bell pepper (my addition)
cracked black pepper
red onion

I will often make one of these 3:
chickpeas
fresh chopped cilantro
chopped onion
salt
freshly cracked pepper
garlic powder
fresh lemon juice
olive oil
OR
chickpeas
chopped red pepepr
chopped purple onion
vinegar
oil
salt
pepper
splenda
OR
chickpeas
toasted cumin seed
sauteed onions, garlic, tomatoes
salt
pepper
oil
I've also made the one in Mishpacha ages ago, with green olives, purple onion, red pepper, corn, and basic vinegar/oil/sugar dressing. I loved it but dh didn't so I don't make it that often. _________________ For every minute of anger, you lose sixty seconds of happiness.
