I thought this would be a fun dessert to try this week. Can I use any chocolate chip cookie recipe? Or is there a specific one that is sturdier or works better? Also, I know I can use slightly defrosted ice cream for the filling, but I would rather make my own if possible...Anyone have any ideas? No raw eggs please.

I've made chocolate chip cookies sandwiching vanilla ice cream, and then the sides rolled into sprinkles.

For homemade ice cream without raw eggs, follow the directions on the back of the frozen whipped topping.

Giant fudge cookies should be delishes too.

There are a bunch of recipes in that link- were you referring to the chocolate chip cookies from Levana? Those chocolate-peanute butter cookies in the link sound really good too...I'm thinking of making them and using vanilla ice cream and chocolate sprinkles.

Also, the only whip I have in the house is the small Rich's whips and there is no recipe on the back. Which whip were you referring to? If you have a minute to post the recipe, that would be awesome and so appreciated!

Yes, we did the choc chip cookies.
But the chocolate peanut butter ones would probably be really good!
I don't have a whip handy, but I think basically what you do it just whip it to optimal height along with sugar and vanilla, and then freeze. (I usually use raw eggs, so I'm not sure, but I think 1/4 cup sugar and 1 tsp vanilla extract for one 8 oz. whip.)

Thanks so much. I'm going to try it with the chocolate peanut butter cookies. And I think this time I'm just going to buy pareve ice cream this time and use tha for the filling. But I am going to look out for that whip next time I go shopping so I can get the recipe.

And thanks lollygirl- that recipe looks great. I will bookmark it for future use!
