Eggplant Lasagna
1 - 2 eggplants, sliced
pkge of frozen spinach, juices squeezed out
pkge of fresh mushrooms, sliced
jar of tomato sauce, any
pkge of shredded cheese
You layer your eggplants in a baking pan with the rest of the ingredients. Bake at aboaut 400 deg for half an hour. Serve as-is, or on bread.
