It's actually super simple but delish. Take 3-4 large sweet potatoes and cut them up into small pieces (no need to peel them), about 1-inch cubes. Then cut up an onion or 2. Throw then together in a 9x13 pan. Sprinkle about 2 tablespoons of onion soup mix on top, then drizzle with olive oil. Mix it all up, then bake at 350 for about 45 minutes (until they are soft). That's it!

oven saucy chicken

spaghetti squash with sauteed onions and pepper on top
cole slaw
dessert and tea (my mother is doing the cakes, so not sure yet what they will be)

Tues lunch
salmon
flounder for those who don't like salmon
matza pizza
apple kugel (from costco)
spinach kugel
matzoh and cream cheese, margarine and jelly

Tuesday night second seder

Wednesday lunch

tia!

The feta-crusted salmon is a year-round recipe that I'm adapting (hope it works out!):

1 (2 pound) salmon fillet, bones removed (I bought frozen fillets because they were on sale and will use several)
1/2 cup crumbled feta cheese
1/3 cup light mayonnaise
1 tablespoon light cream cheese
1 teaspoon balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika, ground
1 tablespoon onion powder
1 teaspoon garlic powder

Mix everything but the salmon together and spread over the salmon. Bake at 400 degrees for about 25 minutes.

Mushroom-Onion quiche

3 eggs
1/2 cup milk
1 small chopped onion (sauteeing beforehand adds some flavor but I'm usually too lazy)
1 8 oz Can of mushrooms
1/2 cup shredded cheese (I might use a little more)
salt, pepper, garlic powder to taste

Mix everything together and pour into 9-inch round pan. Bake at 350 degrees for about 45 minutes.

Apple Kugel (Recipe I found here)
5 lg apples (any kind)
Innamon and sugar
3 eggs
1 C matzo meal
3/4 C sugar
1/2 C oil

Grease bottom of pan ( I used 9x13)
Peel and slice apples, place in pan and sprinkel with cinnamon and sugar.
Combine eggs, matzo meal, sugar and oil and mix well. Pour over apples and bake @ 375 for approx 35 min or until browned.

Our menu mostly consists of gefilte fish, chicken soup (russel borsht once or twice; maybe creamed vegetable soup one day) roast with gravy or schnitzel, mashed potatoes or chremselach or potato kugel, apple crisp sometimes and compote or pears in wine sauce for dessert.

Yapchik and veal roast on Shabbos
Salads: cucumber, beet, carrot and potato

stir fry is no recipe. Just onions, carrots, and courgette cut into sticks or circles stir fried together. add salt and whatever seasonings you like.

2 tone potatoe roll - cook about 10 sweet potatoes and 12 potatoes sperately. fry some onions. mash sweet pots. with some salt. mash potatoes with salt and fried onions. make a layer of white potato on a peice of silver foil, about 1cm thick. then put layer of sweet p. on top. roll up like a jelly roll. freeze for 6 hours. (I'm freezing for several days) then take out, slice, and bake on a tray for 15 minutes.

sweet potato tortilla (my kids school asked parents for pesach recipes and sent home a whole cookbook. this is one of them. I haven't tried it yet but it looks good)

1 tbsp olive oil
1 large sweet potato diced (cooked or raw? I will ask person who sent in recipe)
I red pepper diced
1 garlic clove crushed
4 mushrooms sliced
6 eggs
parsley (will skip this, we only use peelable veggies)

heat oil, cook potatoe and onion in frying pan till onion is soft. add pepper, garlic and mushroom and cook 5 minutes more. whisk eggs and season with parsley, salt and pepper. pour into pan, lower heat, and cook until eggs are almost set. finish off under grill. (or you can try flipping) if putting under grill cover handle with foil.

a non stick skillet is probably best for this.

Shabbat hagadol--still using up a bit of chametz that's already cooked/frozen/just need reheating. Main is all pesachdik, thank goodness I just finished ovens.
Fri night: chicken soup with noodles, chicken, rice with orzo, green salad, fruits.
Sat lunch: hummous, baba ganoush, moroccan salad, mushroom phyllo turnover, meatballs, chicken, yerushalmi kugel, rice with orzo, green salad, fennel salad, sticky toffee pud, sorbet, fruit salad.

Sun: cereal/challah toast for b'fast, sandwich or veggie cottage pie for lunch, we'll probably go out for pizza in the evening

Mon: cereal for b'fast. jacket potato or rice for lunch.

Sedarim: doing the same both 1st and 2nd. Chicken soup (leek broth for veggies), brisket, chicken, meatballs, leek patties, something with potato (sweet potato or spicy white potato), sweet and sour carrots and celery, green salad, store-bought cake, fruits

1st day lunch: smoked salmon, guacamole, cream cheese, roasted red pepper dip, either fried fish(cod) or baked salmon, potato salad, israeli salad, fresh fava beans with mint, ice cream, fruits

invited out 2nd day lunch.
