I was brave enough to try the "mock turtle soup" from Family First from 2 weeks ago and it was fingerlickin awesome!!! Brynie Greisman's recipes are almost always up my alley, she has the 'hungarian taste'... this was just scrumptious, even my 2 yr old loved it and my dh took 2 bowlfuls!!! Enjoy!

2-3 meat bones or 1 turkey neck (I put in the meat bones, it made the soup very rich and a little fatty, next time I'll try to find turkey neck instead)
1 pound flanken or other soft meat (I used thinly sliced shoulder steak)
1 whole onion
3 stalks celery diced
4 carrots diced or shredded
2 large potatoes minced or diced
1/3 cup green split peas
1/3 cup yellow split peas
1/3 cup barley
generous handful of small white lima beans
1/2 bunch fresh parsley
1 parsley root optional
1 tbsp salt or to taste
2 tbsp onion soup mix

Place meat and bones in 6 or 8 qt pot
cover with water
bring to a boil
as the water is being brought to a boil skim off all the foam that rises to the surface
reduce heat and simmer for 15 minutes
add split peas, barley & Beans & cook for 30-45 minutes
add vegetables and additional water to cover
bring to a boil
add seasoning
then lower flame and simmer for at least 2 hours or until peas and beans are soft
before serving, cut meat into bite size pieces and return to pot
garnish with parsley leaves

How "piecey" of a soup is it? In other words, do the peas sort of melt into the soup, or are they floating in the soup?

My dh doesn't like hearty soups with vegetables and beans and things like that in it. But if I left the beans out of this soup, would it still fit that description?

Doesn't this recipe make a lot? Anyone know if the leftovers would freeze well?

Looked like a delicous recipe. I hope to try it one day.

Did anyone else notice that most of the recipes had almost nothing to do with the original english ones?

Yes, I noticed. You can always try to make the things according to Lady Judith's recipes. Wink

I had to track down this thread. I just read about turtle soup, real and mock, in the book Fannie's Last Supper.
I have to wonder if this tastes anything like the real, or real mock thing.

Am I the only person who is thinking Alice in wonderland?

I googled some recipes for this and the original recipe contain beef (a calf's head originally) and mushrooms and root veggies, no beans at all.

Sounds like a nice recipe but do not call it something it isn't.
