Hi all,
My Mother in law is on the SCD diet and is coming for shabbos. I need help coming up with a menu for Friday night and Shabbos day!

So far for friday night I have:
1. Chicken soup
2. Roasted Veggies
3. Chicken of some sort (need Ideas)

I need more sides for that meal!

For Shabbos day I am a little lost since I can't make cholent. I was thinking of making a stew but need ideas on how to do that... I also need ideas for sides to serve with the stew.

Steamed cauliflower is delicious in the chicken soup and with a meat stew.
What about fish?
Eggs?
Liver?
Salad?
Cold cuts?

do you have almond flour? I have some great cake/sweet kugel recipes.

meanwhile:

broccoli kugel

1 lg bag frozen chopped broccoli (not broccoli cuts, the pieces need to be smaller)
8 eggs
1 onion
oil
salt

mince and sautee onion. beat eggs in bowl. add salt, combine well. add egg mixture, onions to broccoli (no need to thaw, just hit the bag on the counter to separate the pieces) mix well. pour into 9x13 pan, bake until edges brown and egg is set.

bake at whatever temp the other stuff in your oven requires Smile

as for chicken, you can make some great honey mustard chicken. make sure your mustard is plain, and does not contain "natural flavoring." good old yellow mustard. pour a bunch in a bowl. add an equalish amount of honey. combine well. smother chicken with mixture, bake. I like to leave the skin on and overbake. the skin gets nice and crackly, and the meat stays moist.

blanched string beans usually go over well.

you can also make moroccan carrots.

2 lbs carrots, peeled
3 tbsp olive oil (more for sauteeing)
1/2 tbsp cumin
1/2 tbsp paprika
1/2 tbsp salt (ask mil if she checks ing for salt, some ppl do)
a small dollop of honey
1/2 tsp black pepper
3 cloves garlic, sliced
pinch cayenne pepper
3 tbsp white wine (make sure it's dry, or skip it. it's good to add, though)

boil carrots until slightly tender. drain and ice immediately. when cool, slice in 1/4 inch rounds. sautee until slightly brown (I sometimes skip this step). combine rest of ingredients. toss with carrots and refrigerate to set flavors (preferable overnight).

I am on the scd, so I know these recipes are legal.

as a dessert, I would recommend baking apples with some honey and cinnamon or slicing VERY RIPE bananas and drizzling with honey and adding a dash of cinnamon. you would not believe how good the bananas are like that, and it's really easy to make.

it's very hard to get scd legal cold cuts, but if you find some, let me know. I want some too Smile

Thanks for the broccoli kugel recipe, I will try it.
I like simple recipes.
I usually make broccoli/cauliflower with cheese in the oven as a side dish.
Easy and delicious.

There are some cold cuts out there that are all natural with no additives. Yes they are not always easy to find. There is also natural wild Alaskan lox without additives.

I love the suggestions above. Don't forget to make the apple pie.

Does she eat raw fruits & veggies already? If yes, have that prepare dint he fridge for snacking, and veggi salad.

Yum. Haven't had a salad in six years Sad

Just remember, she is going to LOVE YOU after this Shabbos.

Also, don't forget the mustard. It works well with fish, chicken, kugel, anything.

If you'd like a delicious SCD marinated salmon recipe, and good SCD cholent recipe, I can get them from my friend for you!

You can make Mrs Bissli's crustless zucchini quiche as a Friday night side.
For chicken, you can make mummiedearest's "everything bagel" chicken on skinless chicken legs.

Lots of salads (if you need ideas, just holler.)

For shabbos day you can make egg salad. Sauteed liver. Or mock chopped liver from behappysk.

You can make a roast if you feel you need some sliced meat for Shabbos day.

For dessert, you can make baked apples. Naturally sweet applesauce - yum.

I can post links to any of these recipes if you'd like.

I would love an SCD cholent recipe, please! I usually use beans and make "chil-ent" b/c it really comes out more like chili.....

--2 kids on scd for crohn's and, b''h, doing great
