So when I make lasagna, I don't boil the noodles first, so I often have broken bits of lasagna noodles left over. (I break the ends off to fit in the pan).

I've got about a quart size ziploc filled with ends. Any suggestions on what I can make with them? I was thinking to boil them and maybe use them for kugel, but I don't really have enough.

Any suggestions?

I don't boil my noodles first and they fit just fine, I never have to break them. I use a 9 x 13 pan and it fits.

I would add them to broth for soup. This could be a Sunday lunch.

Can you break the bits down further, and add them to a spaghetti sauce?

That sounds perfect for lasagna chips! YUM@!

Just spread the bits on a cookie sheet lined with parchment paper, smear with olive oil, sprinle whatever spices you'd like and bake at 400 F/200 C until crisp. (about 20 minutes, turn over chips once in the middle)

I alternate the direction of the noodles at each layer and to fit the short way I need to snap off about and inch or two.

Do the bits need to be cooked first? What kind of spices do you use? I would like to do this as an appetizer - do you serve it with a dip? If yes, what would you recommend?

Don't cook them first. I spice them with seasoned salt, garlic powder, onion powder, oregano, and paprika.

If you do serve them as an appetizer with dip, you could do a cream cheese based dip for milchig, or salsa and/or guacomole.

Enjoy!

What do you do with the lasagna chips? ie. how do you serve them, what do you eat them with?
TIA.

Me personally? They never even make it off the cookie sheet! Laughing

Usually, we just eat them as a snack, like regular chips. I keep them in an air-tight container for all the few hours that they last. Truth is, now that I think about it, I've melted cheese on them befoe also (after being baked) and that was also really good.
