Okay, it's not that precocious of her as she will be 17 soon, after all, but since she's a skinny teen who more often than not sniffs up her nose at food, I am just happy that she will make and eat something!

She makes the basic pancakes from the purple Lub cookbook.

I like the ones from the better homes and gardens cookbook. They seem to rise better and make less pancakes. While I love the spice and spirit, I find the receipes they offer are usually service for 12 or more.

1 cup all purpose flour
1 tablespoon of sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
1 cup of milk

In a medium bowl stir together flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture and set aside.

IN another medium mixing bowl combine teh egg, milk, and cooking oil. Add egg mixture all at once to the try mixture. Stir just till moistened (batter should be lumpy).

Fry like you would pancakes.

DD's makes 24 pancakes, but she usuallymakes half the recipe.

That recipe sounds almost like hers; I wonder how it's different?

Anyway, I don't eat fried carbs like that, so it doesn't matter how many she makes. It's her treat.
