My block is having an Oneg Shabbos this week and asked me to bake.... Just recently I started doing all my baking from scratch (mostly cakes) .... If anyone has good pick me up Desserts I would love to hear .... Please help

Cookie Brittle (ALWAYS a huge hit when I make it)
1 cup Butter Or Margarine, Must Be Cold
1 cup Sugar
1-½ teaspoon Pure Vanilla Extract
2 cups All-purpose Flour
1 teaspoon Salt
½ cups Chocolate Chips
½ cups Dried Fruit, Chopped
½ cups Nuts (chopped Or Shredded As Needed)*
Preparation Instructions
Cream the butter, sugar and vanilla extract.
Add the flour and salt and mix until the mixture is crumbly.
Add the chocolate chips, fruit and nuts and mix until well blended.
Pour onto a 10 x 15 cookie sheet or pan, spread until it’s even, then press to firm it up.
Bake in a 350-degree oven for 20-25 minutes or until it just starts to get slightly golden brown.
Cool for 15 minutes, then break into pieces.
Suggested variations:
My favorite mix is to use chocolate chips, craisins and either almond slivers or chopped, toasted hazelnuts. Another trio that we’ve found works really well is shredded coconut, chopped macadamia nuts and chopped dried pineapple (using canned pineapple won’t work because it’s too wet and the cookie won’t set properly). Feel free to use butterscotch chips, or peanuts or dried dates or apricots for your cookies.

cookielady posted the following recipe for chewy granola bars almost a year and a half ago. I usually have to make it and hide it until I want to serve it because it flies out of the pan.
1/2 cup butter or margarine
1 cup brown sugar
1/4 cup sugar
2 T. honey
1/2 tsp PURE vanilla extract
1 egg
1 cup flour (I use half regular, half whole wheat)
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup oats
1 1/4 cup crisp rice cereal
1 cup chopped nuts (I used peanuts)
1 cup chocolate chips or raisins
In a mixing bowl, cream margarine and sugars. Add honey, vanilla, and egg. Mix well. combine flour,cinnamon, baking powder and salt. Gradually add the dry mixture to the creamed mixture. Stir in oats, cereal, nuts, an chocolate chips.
Press into a greased 9x13" pan. Bake at 350 degrees for 25 to 30 minutes or until top is lightly browned.
Yield: 2 dozen bars

shopaholic posted another favorite of ours almost 3 years ago (!!!). We jump it up a little by adding lemon zest to the batter.
Lemon Delight Bundt Cake
2 1/2 c flour
1 1/2 c sugar
3t baking powder
3/4 c orange juice
3/4 c oil
2t lemon extract
4 eggs
Glaze:
1 1/2 c confectioners sugar
1/2 c lemon juice
Preheat oven to 325 & grease & flour bundt pan. Combine dry ingredients. Add liquids & beat 3-4 minutes. Bake for 45-50 minutes. When done, insert a skewer every 1". Pour 1/2 the glaze over so it seeps into the holes. When cool, turn it over & pour on the remaining glaze.
(As you can see, I used a regular tube pan)

Oh, and how could I forget this one, from greenfire!
Marble Crumb Cake
4 1/2 cups flour
2 cups sugar
4 1/2 tsp baking powder
1 1/2 cups crisco
mix these ingredients together. reserve 1 cup for crumb topping
then add:
5 eggs
1/2 cup parve milk
1/2 cup water
2 tsp vanilla
mix well ... pour 1/2 of batter into 9x13 baking pan
in separate bowl mix:
1/2 cup cocoa
1/2 - 3/4 cup sugar
1/2 cup pareve milk
1 tsp vanilla
mix till smooth ...
then marbelize with batter in pan ... pour remainder of batter on top ... sprinkle crumb topping and bake for 1 hour at 350
Okay, I'll let other people post for a bit...

CHOCOLATE COOKIES:
1 cup margarine or crisco
3/4 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
2 cup flour
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
white chocolate chips
Mix all ingredients together. Bake at 350 on an ungreased cookie sheet for 8-10 minutes
SPRINKLE COOKIES:
1/2 cup margarine
1/2 cup sugar
1 egg
1 tsp vanilla
1 tsp lemon juice
1/2 tsp baking powder
1 1/2 cup flour
rainbow sprinkles
Cream the margarine. Add sugar and then the egg. Mix in vanilla, lemon juice, and baking powder. Add flour and mix well. Roll dough into balls. Roll balls in sprinkles (coat them well). Flatten the balls. Place on cookie sheet and bake at 350 for 10-12 minutes. Let cool on cookie sheets for 2 minutes before removing them.

Thanks for this reciepe. It looked and sounded delicious, so I made it for shabbos. I'm not trying to be rude or anything, but it tasted kinda weird and tastless (like tasted of margarine) so I was wondering if by any chance you left out an ingredient?

This is just about the cookie brittle in one of the Kosher by Designs. IMO it's marvelous.
I think she calls for the margarine to be room temp though. (And more sugar? | I find if the margarine isn't cold, the texture is totally off. it should be very crumbly, which is best with cold margarine.

Recipe for chocolate chip cookie topped brownies
The truth is, if you have a tried and true cookie recipe, and a T&T brownies recipe, use that. Just double the brownies recipe. If you don't have one, here's what I use (again, I double the brownies)
Brownies (single batch)
1/2 cup (1 stick) butter or margarine, melted
1 cup sugar 1 teaspoon vanilla extract
2 eggs 1/2 cup all-purpose flour
1/3 cup HERSHEY'S Cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped nuts (optional)
Heat oven to 350°F. Grease 10 x 13 baking pan.
Stir together butter, sugar and vanilla in bowl. Add eggs; beat well with spoon. Stir together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended. Stir in nuts, if desired. Spread batter evenly in prepared pan.
Chocolate Chip Cookie Recipe:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto the brownies.
Bake 40 to 45 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
