before chanuka I bought a 20 lb bag of potatoes thinking that I will make latkees etc.. now after the partying season I found myself to close to a full bag and nothing to do with it.. any good recipeis ideas excpet for mashed and baked cubed potatoes?

potato kugel etc I can check the reciepie in the cookbook as for the other fun sounding stuff.... recipies please!

Hasselback Potatoes

4 potatoes
4 garlic cloves, sliced into very thin slivers
olive oil
coarse salt
black pepper

Clean the potatoes with skins on. Cut slits on top of each potato approximately 1/8 inch apart.
(Be careful not to go all the way through! Place chop sticks or wooden spoons along each side to help prevent cutting all the way through the potato. I make about 25-30 slits in each potato.)
Place potatoes on baking sheet. Place a garlic sliver in between every other slit. Drizzle with olive oil. Sprinkle with salt and pepper.
Bake uncovered at 450 for 1 hour and 30 minutes. Potatoes will gently arch as the slits slightly fan out. Outside will be crispy, inside soft and delicious.

Potato soup, or any good veggie soup can benefit from potatoes.

Kugels, potatoes and eggs, layer potatoes onions and ground beef in a sauce. Bake.
Roasted with other veggies...chunk them, not cubed, fourths maybe and then onions and carrots....
Potato pie.
Make a chicken pot pie.

We love potatoes here.

truly yum. Esp swiss and cheddar mixed together! ooooooooooooH I miss cheddar and swiss.

I used a bunch of diffrent cheeses. red leicester (or was it double gloucester) mozzarella, chedder and some parmesan.

I've definitely made pie of chicken, potatoes, onions and carrots. I don't know if it would be called Shepards pie, but who cares? Just cut up the cutlets into small pieces.

Shred potatoes, onion and mix with eggs and the spices you like. Fry and you have an excellent dish for hungry kids!

I'll start with these and get the rest for you later iyH.

Potato Soup
• 1 large onion, chopped
• 4 potatoes, cubed
• 2 Tbsp flour
• 4 cups water
• 1 Tbsp salt
• 1/8 tsp black pepper
• 1/4 cup noodles

Heat the cooking spray in a medium pot, over a medium flame. Add the onions and cook for 8 minutes, until translucent.
Add flour to form a paste.
Add cubed potatoes, water, salt and pepper.
Bring to a simmer. Cook for 25 minutes.
10 minutes before soup is done, add noodles.


Potato Puffs
• 1 onion
• 4 Tbsp oil
• 4 potatoes, peeled and cooked
• 2 eggs
• 3/4 cup flour
• salt and pepper, to taste
• sesame seeds

Sauce an onion until soft in 4 Tbsp oil.
Cook up potatoes, drain, and then mash with sauteed onion/oil. Add eggs, flour, salt and pepper; mix well.
Spray cookie sheet very well with cooking spray. Scoop out potato mixture to form little puffs on onto cookie sheet.
Smear top of puffs with egg; sprinkle with sesame seeds
Bake at 400 for about 40 minutes to 1 hour.

Potato Wedges
• potatoes, skin on
• salt and pepper
• potatoes
• olive oil or cooking spray

Preheat oven at 450 degrees.
Cut the potatoes into wedges (each potato, in 4, lengthwise) and place them in a disposable aluminum pan. Drizzle with olive oil or spray with cooking spray.
Season the potatoes very well with salt and pepper. Stir potato wedges to coat them evenly.
Bake potatoes uncovered for 45 minutes.

I haven't tried freezing them.

I believe OOTBubby makes a similar recipe with the batter flattened out in a pan, egged and baked, and she said that it freezes very well.

Cheesy Stuffed Potatoes
• 3 large potatoes, scrubbed and dried
• cheese
• sauteed or steamed vegetables

Pierce each potato a few times with the tines of a fork.
Wrap each in foil and bake in oven preheated to 400 for about 1 hour.
Cut each potato almost in half. (Do not cut all the way to the bottom of the potato.) Stuff with cheese and a bit of vegetables of your choice. Close potato back up, watch the cheese melt, and serve.

(or else you can make the following stuffing, from KBD kids:
Chop up 1 cup broccoli florets. Cook in small pot with water to cover. Bring to boil and cook 5-6 minutes. Drain. Return broccoli to pot. Add 1/2 cup shredded cheese.
Dissolve 2 tsp flour in 2 tsp milk. Add mixture to pot of broccoli and cheese. Add 1/2 tsp salt. Heat over medium, stirring until melted.)

Hashbrowns
• 4 potatoes, peeled and cut into large dice
• salt
• oil for sauteeing
• 1 large onion, chopped
• paprika, salt and pepper to taste

Place the potatoes into a medium pot and cover with cold water. Season with some salt and cook over high heat. Bring up to a bubble, reduce the heat to medium and simmer the potatoes until al dente (they should be tender enough to pierce easily with a knife but not quite mashable), about 8 minutes.
When the potatoes are ready, drain them and shock them under cold water briefly. Scatter them out onto a kitchen or paper towel and blot off any excess water.
Heat oil over medium-high heat and sauté onions. Add the drained and dried potatoes to the skillet, sprinkle generously with paprika, salt and pepper to taste. Cook, turning occasionally, until golden brown.
