Also, merelyme posted a recipe for orange soup that has become one of my new favorites (I made it twice recently):

Orange soup:
Peel and dice/cut onions, carrots, sweet potatoes and pumpkin. In a large pot, sautee onions. Add carrots and sautee, then add sweet potatoes and pumpkin. Add water. Bring to a boil. When it's cooked, puree most of the vegetables with a stick blender, leaving a few lumps for interest. Add salt, pepper, and garlic (optional) to taste.

regular pumpkin? We have a couple of them that ds got from a school trip.

Favorite and easiest- broccoli soup:
saute onions in a soup pot. add a bag of frozen broccoli, cover generously with water, then add another 2-3 cups water, salt, pepper (optional: some soup mix) and boil. Blend with immersion blender. Serve with shredded cheese or croutons.

Cute! I also make this, with garlic added to the onions and serve it as is.

My favorites are KBD's zucchini soup, Dining In's savory butternut squash soup and mock potato soups (cauliflower and zucchini), carrot ginger soup... all creamy, delicious, and low fat!

Lentil soup: 1c green lentils, 3 sliced carrots, sauteed onions, salt. boil. simmer until carrots are soft, then add 1 T miso (mush with some liquid from soup and then pour back into pot). really yummy and filling.

Remember that most of these soups freeze well. Do yourself a favor, make large batches and freeze what you aren't using. It has been great to take out smaller size containers so everyone can have this soup they like best.

Soups with large pieces of vegetable don't freeze as well as purred soup. Mushroom barley soup is an excellent soup to freeze.

Veggie soup:

A couple of onions, some garlic, a bunch of carrots, a couple of potatoes, a bag of frozen string beans, one or two zucchini (because we don't like zucc much), some celery, a 28 oz can of chopped tomatoes, another of crushed or pureed tomatoes, two 14-16 oz cans of kidney beans, one of chickpeas, some salt, pepper, and basil. If you have at hand, turnip, leek, and parsnip.

I always start out in a normal soup pot and then realize that I'm overflowing it and end up pouring the whole thing into my monster stock pot. Paired with whole wheat bread, it's a whole meal and it freezes reasonably well.

I think it freezes fine too. Some people may not like the texture of the mushrooms but I've trained my family well.

I make a regular basic veggie soup - (Sautee onions and garlic, then add chopped carrots, zucchini. Then add butternut pumpkin and any other veggies you like. Add stock/water. Salt, pepper, boil for 45 min an hour)

Then I blend fresh basil and garlic and a bit of olive oil and put it on top when I serve the soup. It completely changes the flavour and is amazing!

My favorite is the following mushroom barley soup:


2tbsp soy sauce
2tbsp teriyaki
4 tbsp wine
10 cups consommee 10 tbsp 10 cups
16 oz mushrooms
1cup barley
One onion

Fry onion in marg

Add ingredients cook one hour

I usually make a ton of chicken soup for shabbos and use the leftovers for this soup instead of the consumme.
